Corn sauce

Ingredients

  • 1 bag of corn
  • 1/2 an onion, diced
  • 2 tbsp olive oil
  • Diced chives (optional)

Directions

Sautee the onions in the oil until softened. At the same time, cook the corn. Toss the onions, oil, and cooked corn into a blender and blend until smooth, adding enough water until the consistency is right. Salt and pepper to taste, and if using, add diced chives.

Serve over gnocchi with toasted pistacchios and ricotta cheese.
